Sheet Pan Chicken with Potatoes, Green Beans, and Tomatoes

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • 2 lb small red potatoes, quartered
  • 2 (12-oz) pkg thin green beans
  • 2 pints grape tomatoes
  • ¼ cup olive oil
  • 3 Tbsp whole-grain mustard
  • 2 Tbsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp chopped fresh tarragon

Instructions

  1. Preheat oven to 425°F. Place 2 large rimmed baking sheets in oven while preheating.
  2. Toss together chicken, potatoes, green beans, tomatoes, oil, mustard, garlic, salt, and pepper in a large bowl. Arrange in an even layer on preheated baking sheets.
  3. Bake 20 to 25 minutes or until chicken is done and vegetables are tender. Sprinkle with tarragon.
