Chicken Fajita French Bread Pizzas
Avocado Wedge SaladIngredients
- 1½ lb boneless, skinless chicken breasts, thinly sliced
- 1 (1-oz) envelope fajita seasoning mix
- 1 (16-oz) pkg frozen bell pepper and onion stir-fry medley
- 2 Tbsp olive oil
- 1 (16-oz) loaf French bread, halved lengthwise
- 1 cup pizza sauce
- 1 (8-oz) pkg shredded colby-Jack cheese
- ½ cup sour cream
- 3 Tbsp water
- 3 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 425°F. Sprinkle chicken with seasoning mix. Cook chicken and stir-fry medley in hot oil in a large nonstick or cast-iron skillet over medium-high heat until chicken is done.
- Place bread, cut sides up, on a baking sheet. Bake 5 minutes. Top with pizza sauce and chicken mixture; sprinkle with cheese. Bake 10 to 15 minutes longer or until edges are golden brown.
- Whisk together sour cream and water; drizzle over pizzas and sprinkle with parsley.
Side Dish Ingredients
- 1 head iceberg lettuce
- 2 avocados, diced
- 2 tomatoes, chopped
- ¾ cup Ranch dressing
Side Dish Instructions
- Cut lettuce into 6 wedges. Top lettuce wedges with avocado and tomato.
- Drizzle with dressing just before serving.
