Refried Bean Taquitos
Half-Moon ZucchiniIngredients
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (15-oz) can refried beans
- 18 corn tortillas
- 1 cup salsa, divided
- 2 cups shredded Cheddar cheese
- 3 Tbsp butter, divided
- 2 avocados, chopped
Instructions
- Sauté garlic in hot oil in a large skillet 30 seconds or until fragrant. Add beans; cook 2 to 3 minutes or until thoroughly heated.
- Heat tortillas according to package directions. Spoon bean mixture into center of tortillas; drizzle with ½ cup salsa, and sprinkle with cheese. Roll up.
- Melt 1 Tbsp butter in a large skillet over medium heat. Add 6 tortilla rolls, and cook 2 to 4 minutes or until lightly browned on all sides.
- Repeat procedure with remaining butter and tortilla rolls. Serve with avocado and ½ cup salsa.

- 3 zucchini, cut into half-moons
- 2 Tbsp olive oil (or use butter)
- ½ tsp garlic salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté zucchini in hot oil in a large nonstick skillet over medium-high heat 5 to 7 minutes or until tender. Sprinkle with garlic salt and pepper; toss.
