Refried Bean Taquitos

Ingredients

  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (15-oz) can refried beans
  • 18 corn tortillas
  • 1 cup salsa, divided
  • 2 cups shredded Cheddar cheese
  • 3 Tbsp butter, divided
  • 2 avocados, chopped

Instructions

  1. Sauté garlic in hot oil in a large skillet 30 seconds or until fragrant. Add beans; cook 2 to 3 minutes or until thoroughly heated.
  2. Heat tortillas according to package directions. Spoon bean mixture into center of tortillas; drizzle with ½ cup salsa, and sprinkle with cheese. Roll up.
  3. Melt 1 Tbsp butter in a large skillet over medium heat. Add 6 tortilla rolls, and cook 2 to 4 minutes or until lightly browned on all sides.
  4. Repeat procedure with remaining butter and tortilla rolls. Serve with avocado and ½ cup salsa.

  • 3 zucchini, cut into half-moons
  • 2 Tbsp olive oil (or use butter)
  • ½ tsp garlic salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté zucchini in hot oil in a large nonstick skillet over medium-high heat 5 to 7 minutes or until tender. Sprinkle with garlic salt and pepper; toss.
