Baked New Orleans "Barbecue" Shrimp

Ingredients

  • 1½ lb peeled and deveined, large shrimp
  • 1 Tbsp avocado oil
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • 3 Tbsp Cajun seasoning
  • 2 Tbsp coconut aminos
  • ½ tsp hot sauce
  • ¼ tsp pepper
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
  2. Combine oil, lemon juice, garlic, seasoning, coconut aminos, hot sauce, and pepper. Pour over shrimp; toss.
  3. Bake 10 minutes or until shrimp turn pink. Garnish with lemon slices.

  • 1½ Tbsp apple cider vinegar
  • 1½ Tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ½ tsp dried thyme
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (12-oz) pkg broccoli slaw

Side Dish Instructions

  1. Whisk together vinegar, oil, mustard, garlic, thyme, salt, and pepper.
  2. Add slaw; toss. Serve immediately, or cover and chill 1 hour.
