Pork Chops with Fresh Creole Sauce
Spicy Spinach and Brown RiceIngredients
- 6 (6-oz) bone-in pork chops
- ½ tsp salt
- ½ tsp pepper
- 1 tsp Creole seasoning
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
- 1 pint grape tomatoes
- 2 Tbsp chopped fresh parsley
Instructions
- Sprinkle pork with salt, pepper, and Creole seasoning.
- Cook pork, in batches, in hot oil in a large skillet 4 to 5 minutes per side or until done; remove from skillet.
- Sauté garlic, onion mix, and tomatoes in skillet 3 minutes or until tender. Return pork to skillet. Sprinkle with parsley.

- 2 (8.8-oz) pouches microwavable brown rice
- 1 clove garlic, minced
- 2 Tbsp olive oil
- 1 (6-oz) pkg baby spinach
- 1 to 2 tsp hot sauce
- ½ tsp salt
- ½ tsp dried rosemary
Side Dish Instructions
- Cook rice according to package directions.
- Cook garlic in hot oil in a large nonstick skillet over medium-high heat 30 seconds. Stir in spinach, hot sauce, salt, and rosemary. Cook 1 to 2 minutes or until wilted. Stir in rice.
