Pork Chops with Fresh Creole Sauce

Ingredients

  • 6 (6-oz) bone-in pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp Creole seasoning
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
  • 1 pint grape tomatoes
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle pork with salt, pepper, and Creole seasoning.
  2. Cook pork, in batches, in hot oil in a large skillet 4 to 5 minutes per side or until done; remove from skillet.
  3. Sauté garlic, onion mix, and tomatoes in skillet 3 minutes or until tender. Return pork to skillet. Sprinkle with parsley.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • 1 (6-oz) pkg baby spinach
  • 1 to 2 tsp hot sauce
  • ½ tsp salt
  • ½ tsp dried rosemary

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook garlic in hot oil in a large nonstick skillet over medium-high heat 30 seconds. Stir in spinach, hot sauce, salt, and rosemary. Cook 1 to 2 minutes or until wilted. Stir in rice.
