Garden Vegetable Pizza
Mixed Greens with Fresh Lemon VinaigretteIngredients
- 1 (15-oz) pkg already-rolled-out bakery pizza dough (see Note)
- ⅓ cup natural marinara sauce (such as Rao's)
- 1 cup shredded part-skim mozzarella cheese
- 1 cup grape tomatoes, halved
- 1 cup thinly sliced mushrooms
- ½ cup thinly sliced zucchini
- ½ cup thinly sliced yellow squash
- ¼ cup thinly sliced red onion
Instructions
- Preheat oven to 450°F. Roll out pizza dough into a 16-inch round on a greased baking sheet; spread marinara sauce over dough, and sprinkle with cheese.
- Arrange tomatoes, mushrooms, zucchini, squash, and onion on pizza.
- Bake 20 minutes or until crust is golden brown and cheese is melted. Cut into wedges to serve.

- 3 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 (11-oz) pkg mixed baby greens
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Whisk together oil, lemon juice, salt, and pepper in a bowl; add mixed greens, and toss. Sprinkle with cheese.
