Mixed Greens with Fresh Lemon Vinaigrette

Ingredients

  • 1 (15-oz) pkg already-rolled-out bakery pizza dough (see Note)
  • ⅓ cup natural marinara sauce (such as Rao's)
  • 1 cup shredded part-skim mozzarella cheese
  • 1 cup grape tomatoes, halved
  • 1 cup thinly sliced mushrooms
  • ½ cup thinly sliced zucchini
  • ½ cup thinly sliced yellow squash
  • ¼ cup thinly sliced red onion

Instructions

  1. Preheat oven to 450°F. Roll out pizza dough into a 16-inch round on a greased baking sheet; spread marinara sauce over dough, and sprinkle with cheese.
  2. Arrange tomatoes, mushrooms, zucchini, squash, and onion on pizza.
  3. Bake 20 minutes or until crust is golden brown and cheese is melted. Cut into wedges to serve.

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (11-oz) pkg mixed baby greens
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Whisk together oil, lemon juice, salt, and pepper in a bowl; add mixed greens, and toss. Sprinkle with cheese.
