Caprese Pasta with Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 2 tsp Montreal steak seasoning
  • 2 Tbsp olive oil
  • 2 (8.5-oz) pouches ready penne pasta
  • 1 pint grape tomatoes, halved (see Note)
  • ½ (8-oz) ball fresh mozzarella cheese, sliced
  • 1 (1-oz) pkg fresh basil, separated into leaves and stemmed
  • 1 (8-oz) jar pesto

Instructions

  1. Sprinkle chicken with seasoning. Cook in hot oil, in batches, in a large cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until done. Let stand 5 minutes before thinly slicing.
  2. Cook pasta according to package directions. Divide pasta among plates; top with chicken, tomatoes, cheese, and basil.
  3. Microwave pesto in a microwave-safe bowl at HIGH 30 seconds or until thoroughly heated; drizzle over chicken and pasta.
