Grilled Steak and Asparagus with Basil-Blue Cheese Butter
Cabbage-and-Apple SlawIngredients
- ¾ lb sirloin steak
- ½ lb asparagus, trimmed
- 2 Tbsp butter, softened
- ½ cup crumbled blue cheese
- 1 Tbsp chopped fresh basil
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak lightly with salt and pepper. Grill, covered, 5 to 6 minutes per side or to desired doneness. Grill asparagus 2 to 3 minutes.
- Let steak stand 10 minutes. Meanwhile, combine butter, cheese, and basil.
- Cut steak into 2 portions; smear steak and asparagus (if desired) with blue cheese butter.
Side Dish Ingredients
- ½ (14-oz) pkg chopped green cabbage and carrot coleslaw (such as Fresh Express)
- ¼ cup fresh parsley leaves
- 1 small Honeycrisp apple, cored and thinly sliced
- 1 Tbsp fresh lemon juice
- 2 Tbsp olive oil
Side Dish Instructions
- Combine coleslaw and parsley in a large bowl.
- Toss apple with lemon juice; add to cabbage mixture. Drizzle with oil; toss. Season with salt and pepper to taste.
