Bruschetta Chicken Sheet Pan Pizza

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tsp Italian seasoning
  • 2 Tbsp olive oil
  • 1 (13.8-oz) can refrigerated pizza dough
  • 1 cup pizza sauce
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 2 Roma tomatoes, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with Italian seasoning, and season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done. Thinly slice.
  3. Press pizza dough onto a greased large rimmed baking sheet. Spread sauce over dough. Top with cheese, chicken, tomatoes, and onion.
  4. Bake 20 to 22 minutes or until crust is browned and cheese is melted. Sprinkle with basil.

  • 1 cucumber, chopped
  • ½ cup balsamic vinaigrette
  • 1 head green leaf lettuce, chopped

Side Dish Instructions

  1. Toss together cucumber and vinaigrette; chill 30 minutes. Add lettuce, and toss. Serve immediately.
