Jerk Shrimp with Mango Salsa
Cauli-Rice with Pepitas
Ingredients
- 2 lb peeled and deveined, large shrimp
- 1½ Tbsp natural, salt-free Jerk seasoning
- ¾ tsp salt, divided
- 2 Tbsp coconut oil (or use avocado oil)
- 2 (6-oz) pkg diced mango
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice
- ¼ tsp pepper
Instructions
- Toss shrimp with Jerk seasoning and ½ tsp salt.
- Melt oil in a large nonstick skillet over medium-high heat; add shrimp, and cook 2 to 3 minutes or until shrimp turn pink.
- Toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ¼ tsp each salt and pepper. Serve shrimp with salsa.
Side Dish Ingredients

- 2 (16-oz) pkg riced cauliflower
- ½ cup raw pepitas (pumpkin seeds)
- ¾ tsp salt
- ½ tsp pepper
- 4 green onions, chopped
Side Dish Instructions
- Melt oil in a large skillet over medium-high heat; add cauliflower, pepitas, salt, and pepper, and cook 10 to15 minutes or until browned, stirring occasionally. Stir in green onions.
