Greek Gyro Burgers

Bulgur Salad with Herb Vinaigrette

Ingredients

  • 1½ lb ground sirloin
  • 1 large egg
  • ¼ cup Italian panko breadcrumbs
  • ¼ cup olive bruschetta topping (such as Sable and Rosenfeld)
  • ¼ tsp salt
  • ½ tsp pepper
  • 3 pita bread rounds, halved crosswise
  • 1½ cups torn green leaf lettuce
  • 6 thick slices tomato
  • 12 thin slices red onion (optional)
  • ½ cup refrigerated feta-dill Greek yogurt dressing (such as Opa)

Instructions

  1. Preheat grill to medium-high heat. Combine beef, egg, panko, olive topping, salt, and pepper; shape into 6 patties.
  2. Grill patties, covered, 5 to 6 minutes per side or until centers are no longer pink.
  3. Heat pita halves according to package directions.
  4. Stuff pita halves with burgers, lettuce, tomato, and, if desired, onion; drizzle with dressing.

Side Dish Ingredients

  • 1 cup bulgur wheat
  • 1 (1-oz) pkg fresh mint
  • ½ cup fresh flat-leaf parsley leaves (see Note)
  • ¼ cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 (8-oz) pkg tricolor chopped bell peppers
  • 1 (8-oz) pkg chopped red onions (1 cup)
  • 1 tsp salt

Side Dish Instructions

  1. Prepare bulgur according to package directions; drain.
  2. Meanwhile, remove mint leaves from stems. Pulse mint and parsley in a food processor 2 to 3 times or until finely chopped.
  3. Toss hot bulgur with herbs and remaining ingredients.
