Bean and Cheese Burritos
Fresh Orange Sections and Tortilla ChipsIngredients
- 1 (8-oz) pkg microwaveable qunioa and brown rice
- 1 (16-oz) can refried beans
- 1 Tbsp Mexican seasoning
- 6 burrito-size flour tortillas
- 1 (8-oz) carton sour cream
- 1½ cups freshly shredded Cheddar cheese
- 1 (16-oz) container fresh salsa, divided
- 4 cups shredded iceberg lettuce
- 1 avocado, thinly sliced
Instructions
- Heat quinoa blend according to package directions.
- Stir together refried beans, Mexican seasoning, and 2 Tbsp water in a small saucepan.
- Cook over medium heat, stirring often, 4 to 5 minutes or until heated through.
- Spread beans over center of each tortilla; top with rice.
- Top tortillas with sour cream, cheese and salsa, lettuce, and avocado slices.
- Fold in sides of burritos; roll up to completely enclose filling.
- Cut burritos in half, and serve with remaining salsa for dipping.

- 6 navel oranges
- 1 (16-oz) pkg tortilla chips

- Peel and section oranges.
- Serve orange wedges and chips with burritos.
