Bean and Cheese Burritos

Ingredients

  • 1 (8-oz) pkg microwaveable qunioa and brown rice
  • 1 (16-oz) can refried beans
  • 1 Tbsp Mexican seasoning
  • 6 burrito-size flour tortillas
  • 1 (8-oz) carton sour cream
  • 1½ cups freshly shredded Cheddar cheese
  • 1 (16-oz) container fresh salsa, divided
  • 4 cups shredded iceberg lettuce
  • 1 avocado, thinly sliced

Instructions

  1. Heat quinoa blend according to package directions.
  2. Stir together refried beans, Mexican seasoning, and 2 Tbsp water in a small saucepan.
  3. Cook over medium heat, stirring often, 4 to 5 minutes or until heated through.
  4. Spread beans over center of each tortilla; top with rice.
  5. Top tortillas with sour cream, cheese and salsa, lettuce, and avocado slices.
  6. Fold in sides of burritos; roll up to completely enclose filling.
  7. Cut burritos in half, and serve with remaining salsa for dipping.

Side Dish Ingredients

  • 6 navel oranges
  • 1 (16-oz) pkg tortilla chips

Side Dish Instructions

  1. Peel and section oranges.
  2. Serve orange wedges and chips with burritos.
