Caribbean Black Beans
Coconut RiceIngredients
- 1 green bell pepper, chopped
- ½ cup chopped onion
- 1 clove garlic, minced
- ½ Tbsp olive oil
- 1 small mango, peeled, seeded, and coarsely chopped
- 3 Tbsp fresh orange juice
- ¼ tsp ground allspice
- ¼ tsp pepper
- 1 (15-oz) can black beans
Instructions
- Sauté bell pepper, onion, and garlic in hot oil in a skillet over medium-high heat 4 minutes or until tender.
- Add mango, orange juice, allspice, pepper, and beans; cook 3 to 4 minutes or until thoroughly heated. Serve over Coconut Rice recipe.

- 1 cup brown rice
- ¾ cup coconut milk
- 1¼ cups water
Side Dish Instructions
- Cook rice according to package directions, using coconut milk and water for liquid needed.
