Caribbean Black Beans

Ingredients

  • 1 green bell pepper, chopped
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • ½ Tbsp olive oil
  • 1 small mango, peeled, seeded, and coarsely chopped
  • 3 Tbsp fresh orange juice
  • ¼ tsp ground allspice
  • ¼ tsp pepper
  • 1 (15-oz) can black beans

Instructions

  1. Sauté bell pepper, onion, and garlic in hot oil in a skillet over medium-high heat 4 minutes or until tender.
  2. Add mango, orange juice, allspice, pepper, and beans; cook 3 to 4 minutes or until thoroughly heated. Serve over Coconut Rice recipe.

  • 1 cup brown rice
  • ¾ cup coconut milk
  • 1¼ cups water

Side Dish Instructions

  1. Cook rice according to package directions, using coconut milk and water for liquid needed.
