Oven-Roasted Shrimp and Corn
Parmesan Rice and Steamed Green BeansIngredients
- 2 lb peeled and deveined, fresh or frozen (thawed) large shrimp
- 1 (12-oz) pkg frozen whole kernel corn, thawed
- 1 pint grape tomatoes
- 3 Tbsp olive oil
- 4 cloves garlic, thinly sliced
- ½ cup dry white wine
- ¼ cup chopped fresh parsley
- 1 Tbsp Old Bay seasoning
Instructions
- Preheat oven to 425°F. Toss together shrimp, corn, tomatoes, oil, and garlic on a large rimmed baking sheet.
- Add wine, parsley, and Old Bay seasoning; stir. Bake 12 to 15 minutes or until shrimp turn pink. Serve over Parmesan Rice recipe.
Side Dish Ingredients
- 1½ cups long-grain white rice
- 2 Tbsp butter
- ½ cup shredded Parmesan cheese
- 1 lb thin green beans, trimmed
Side Dish Instructions
- Cook rice according to package directions; stir in butter and cheese. Season with salt and pepper to taste.
- Steam green beans in a steamer basket over simmering water until crisp-tender. Season with salt and pepper to taste.
