Oven-Roasted Shrimp and Corn

Ingredients

  • 2 lb peeled and deveined, fresh or frozen (thawed) large shrimp
  • 1 (12-oz) pkg frozen whole kernel corn, thawed
  • 1 pint grape tomatoes
  • 3 Tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • ½ cup dry white wine
  • ¼ cup chopped fresh parsley
  • 1 Tbsp Old Bay seasoning

Instructions

  1. Preheat oven to 425°F. Toss together shrimp, corn, tomatoes, oil, and garlic on a large rimmed baking sheet.
  2. Add wine, parsley, and Old Bay seasoning; stir. Bake 12 to 15 minutes or until shrimp turn pink. Serve over Parmesan Rice recipe.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 2 Tbsp butter
  • ½ cup shredded Parmesan cheese
  • 1 lb thin green beans, trimmed

Side Dish Instructions

  1. Cook rice according to package directions; stir in butter and cheese. Season with salt and pepper to taste.
  2. Steam green beans in a steamer basket over simmering water until crisp-tender. Season with salt and pepper to taste.
