Cheesy Chicken, Broccoli, and Rice Skillet

Ingredients

  • 1 (8.8-oz) pouch microwavable brown rice
  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp butter
  • 1 Tbsp all-purpose flour
  • ½ cup 2% reduced-fat milk
  • ½ cup low-sodium chicken broth
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ cup shredded reduced-fat Cheddar cheese
  • 1 cup shredded rotisserie chicken

Instructions

  1. Cook rice and and broccoli according to package directions.
  2. Melt butter in a large skillet over medium-high heat. Whisk in flour, and cook 2 minutes. Add milk, broth, salt, and pepper; cook, whisking constantly, 5 minutes or until thickened. Remove from heat.
  3. Stir in ½ cup cheese until melted. Stir in chicken, rice, and broccoli. Top with ¼ cup cheese. Cover and cook 1 minute or until cheese is melted.

Side Dish Ingredients

  • 1 (5-oz) pkg mixed baby greens
  • ¼ cup thinly sliced red onion
  • ½ (4.4-oz) pkg blueberries
  • ½ (4.4-oz) pkg raspberries
  • 3 Tbsp refrigerated balsamic vinaigrette
  • ¼ cup crumbled feta cheese

Side Dish Instructions

  1. Place greens, onion, and berries in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
