Baked New Orleans "Barbecue" Shrimp

Ingredients

  • 1½ lb large shrimp (see Note)
  • 1 Tbsp olive oil
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • 3 Tbsp Cajun seasoning
  • 2 Tbsp Worcestershire sauce
  • ½ tsp hot sauce
  • ¼ tsp pepper
  • 1 lemon, thinly sliced (optional)
  • 1 (16-oz) French baguette (preferably whole wheat), sliced and heated

Instructions

  1. Preheat oven to 400°F. Peel and devein shrimp. Place shrimp in a 13- x 9-inch baking dish.
  2. Combine oil, lemon juice, garlic, seasoning, Worcestershire sauce, hot sauce, and pepper. Pour over shrimp; toss.
  3. Bake 10 minutes or until shrimp turn pink; garnish with lemon slices, if desired. Serve with bread.

Side Dish Ingredients

  • ⅓ cup whole wheat flour
  • 2 large eggs, lightly beaten
  • 1 Tbsp water
  • ½ cup whole-grain cornmeal
  • ½ cup panko breadcrumbs (preferably whole wheat)
  • 1 tsp garlic powder
  • 4 large green tomatoes, cut into ¼-inch-thick slices
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Place flour in a shallow bowl; whisk together eggs and water in a second shallow bowl. Combine cornmeal, breadcrumbs, and garlic powder in a third shallow bowl.
  2. Dredge tomatoes in flour; dip in egg mixture, and dredge in cornmeal mixture, pressing gently to adhere.
  3. Cook tomatoes, in batches, in hot oil in a large skillet over medium-high heat 2 minutes per side or until golden and crisp. Drain on paper towels; sprinkle with salt and pepper while warm.
