One-Pot Cheeseburger Gnocchi

Ingredients

  • 1 Tbsp butter
  • 1 (16-oz) pkg gnocchi
  • 1 lb ground beef
  • ½ cup chopped onion
  • 1 (14.5-oz) can diced tomatoes, drained
  • ¾ cup chicken broth
  • 1 Tbsp Worcestershire sauce
  • 1 (8-oz) pkg shredded Cheddar cheese

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Cook beef and onion in same skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, broth, Worcestershire, and gnocchi. Bring to a boil, reduce heat, cover, and simmer 10 minutes or until gnocchi is tender. Stir in cheese.

Side Dish Ingredients

  • 1 head iceberg lettuce
  • ¾ cup buttermilk Ranch dressing
  • 2 Roma tomatoes, chopped
  • ½ tsp seasoned pepper
  • 1 (3-oz) pkg French fried onions

Side Dish Instructions

  1. Cut lettuce into 6 wedges, and place on 6 plates.
  2. Drizzle with dressing; sprinkle with tomatoes, pepper, and onions.
