Hot Dogs with Watermelon Relish

Ingredients

  • 4 cups finely chopped watermelon
  • 1 cucumber, seeded and chopped
  • ½ cup finely chopped red onion
  • 2 jalapeño peppers, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp chopped fresh mint
  • 3 Tbsp honey
  • 2 Tbsp fresh lime juice
  • 1 (8-count) pkg all-beef hot dogs
  • 1 (8-count) pkg hot dog buns
  • ¼ cup honey mustard

Instructions

  1. Stir together watermelon, cucumber, onion, jalapeños, cilantro, mint, honey, and lime juice. Chill at least 1 hour.
  2. Preheat grill or grill pan to medium-high heat. Grill hot dogs, covered, 8 to 10 minutes, turning occasionally, or until browned and thoroughly heated. Grill buns, cut sides down, 1 minute.
  3. Spread honey mustard on cut side of buns. Serve hot dogs on buns with watermelon relish.

Side Dish Ingredients

  • 1 lb zucchini, halved lengthwise
  • 1 lb yellow squash, halved lengthwise
  • 3 Tbsp olive oil
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush vegetables with oil. Grill, covered, 6 to 8 minutes per side or until tender.
  2. Slice and toss with basil. Season with salt and pepper to taste.
