Shrimp Niçoise Salad
Roasted Garlic Multiseed CrackersIngredients
- 2 (16-oz) pkg microwavable garlic-parsley creamer potatoes (such as The Little Potato Company)
- 2 (8-oz) pkg thin green beans
- 1 (16-oz) pkg spring mix
- 1½ lb peeled, large cooked shrimp (see Note)
- 1 (6-count) pkg hard-cooked eggs (such as Eggland's Best), halved
- 2 pints grape tomatoes
- ½ cup pitted kalamata olives
- ½ cup refrigerated lemon vinaigrette (such as Marzetti's)
Instructions
- Cook potatoes and green beens according to package directions.
- Place spring mix on a large platter. Arrange potatoes, green beans, shrimp, eggs, tomatoes, and olives over spring mix; drizzle with dressing.
