Ingredients

  • 2 (16-oz) pkg microwavable garlic-parsley creamer potatoes (such as The Little Potato Company)
  • 2 (8-oz) pkg thin green beans
  • 1 (16-oz) pkg spring mix
  • 1½ lb peeled, large cooked shrimp (see Note)
  • 1 (6-count) pkg hard-cooked eggs (such as Eggland's Best), halved
  • 2 pints grape tomatoes
  • ½ cup pitted kalamata olives
  • ½ cup refrigerated lemon vinaigrette (such as Marzetti's)

Instructions

  1. Cook potatoes and green beens according to package directions.
  2. Place spring mix on a large platter. Arrange potatoes, green beans, shrimp, eggs, tomatoes, and olives over spring mix; drizzle with dressing.
