Grilled Halloumi Salad with Charred Peaches
Grilled Garlic BreadIngredients
- 4 peaches, halved crosswise
 - 1 red onion, cut into wedges
 - 1 (8-oz) block halloumi cheese, cut into ½-inch-thick slices (see Note)
 - 5 Tbsp olive oil, divided
 - ½ tsp kosher salt
 - ¼ tsp pepper
 - 1 (5-oz) pkg arugula
 - 1 (1-oz) pkg fresh basil, torn
 - 3 Tbsp balsamic glaze
 
Instructions
- Preheat grill to medium-high heat. Brush peaches, onion, and cheese with 3 Tbsp oil.
 - Grill onion, covered, 8 minutes or until tender and slightly charred. Grill peaches, cut sides down and covered, 3 to 5 minutes or until charred. Grill cheese, covered, 2 minutes per side or until grill marks appear.
 - Cut peaches into wedges. Sprinkle peaches, onion, and cheese with salt and pepper.
 - Divide arugula among 6 plates; top with cheese, peaches, and onion. Sprinkle with basil; drizzle with 2 Tbsp oil and balsamic glaze.
 
Side Dish Ingredients
- 6 (2-oz) slices bakery bread (preferably multigrain)
 - 2 cloves garlic, halved
 - 2 Tbsp extra virgin olive oil
 
Side Dish Instructions
- Preheat grill to medium-high heat. Grill bread, covered, 2 minutes per side or until lightly browned.
 - Rub 1 side of each slice with garlic, and drizzle with oil.
