Shrimp and Sausage Skillet
Crusty Garlic BreadIngredients
- 1 cup long-grain white rice
- 1 (14-oz) pkg smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 3 Tbsp olive oil
- 2 cups frozen sliced okra, thawed
- 1 lb peeled and deveined, medium-size raw shrimp
- 1 cup chicken broth
- 2 tsp Creole seasoning
- 3 Roma tomatoes, chopped
Instructions
- Cook rice according to package directions; spread in a thin layer on a baking sheet, and cool 30 minutes.
- Cook sausage, onion, bell pepper, and garlic in hot oil in a large, deep skillet over medium-high heat until sausage is browned and onion is tender.
- Stir in okra, shrimp, broth, and Creole seasoning. Cook, stirring often, until shrimp turn pink. Stir in rice and tomatoes; cook 2 minutes.
