Ingredients

  • 1 cup long-grain white rice
  • 1 (14-oz) pkg smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil
  • 2 cups frozen sliced okra, thawed
  • 1 lb peeled and deveined, medium-size raw shrimp
  • 1 cup chicken broth
  • 2 tsp Creole seasoning
  • 3 Roma tomatoes, chopped

Instructions

  1. Cook rice according to package directions; spread in a thin layer on a baking sheet, and cool 30 minutes.
  2. Cook sausage, onion, bell pepper, and garlic in hot oil in a large, deep skillet over medium-high heat until sausage is browned and onion is tender.
  3. Stir in okra, shrimp, broth, and Creole seasoning. Cook, stirring often, until shrimp turn pink. Stir in rice and tomatoes; cook 2 minutes.
