Chicken and Sausage Pasta in Tomato Sauce

Ingredients

  • 1 (16-oz) pkg whole-grain linguine
  • 1 (14-oz) pkg smoked sausages, sliced
  • 1 cup chopped onion
  • 1 Tbsp olive oil
  • 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 tsp Creole seasoning
  • ¾ cup low-sodium chicken broth
  • 1 (28-oz) can fire-roasted crushed tomatoes
  • ¼ cup heavy cream
  • 1 tsp sugar
  • 1 (10-oz) pkg baby spinach
  • ½ tsp salt

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook sausage and onion in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned. Remove from skillet, reserving drippings.
  3. Sprinkle chicken with Creole seasoning; add to skillet, and cook 5 to 6 minutes or until browned. Add broth; cook 2 minutes, scraping browned bits from bottom of skillet with a wooden spoon.
  4. Stir in tomatoes, cream, and sugar; bring to a boil, reduce heat, and simmer 5 minutes. Gradually stir in spinach until wilted. Stir in sausage mixture and salt; cook 1 minute. Toss with hot cooked pasta.

Side Dish Ingredients

  • 1 head Boston or bibb lettuce, torn
  • 2 cups baby kale
  • ½ cup sliced red onion
  • 1 lemon, halved
  • 2 pears, thinly sliced
  • 2 Tbsp honey
  • 1 cup walnuts, toasted
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Place lettuce, kale, and onion in a bowl.
  2. Squeeze juice from lemon. Toss pears with lemon juice and honey; add to salad with nuts. Toss with vinaigrette.
