Chicken Finger Nachos
Refried Beans and RiceIngredients
- 2 lb chicken tenderloins
- 1 Tbsp olive oil
- 2 Tbsp Southwest seasoning (or use fajita seasoning)
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup real bacon pieces (or use crumbled bacon)
- 1 (8-oz) carton sour cream
- 1 (16-oz) container guacamole
- 1 (16-oz) carton fresh salsa
Instructions
- Preheat oven to 400°F; line a rimmed baking sheet with parchment paper.
- Rub chicken with oil; sprinkle with seasoning. Arrange seasoned chicken in a single layer on prepared pan. Bake 20 minutes or until chicken is done.
- Arrange chicken in center of pan to resemble nachos; sprinkle with cheeses and bacon.
- Bake 5 minutes or until cheese is melted. Serve with sour cream, guacamole, and salsa.
Side Dish Ingredients
- 2 (15-oz) cans refried beans
- 1 cup shredded Mexican-blend cheese
- 1 (10-oz) pkg yellow rice
Side Dish Instructions
- Preheat oven to 400°F. Spoon beans into a greased small baking dish. Sprinkle with cheese.
- Bake 10 to 15 minutes or until bubbly.
- Cook rice according to package directions; season with salt and pepper to taste.
