Chicken Finger Nachos

Ingredients

  • 2 lb chicken tenderloins
  • 1 Tbsp olive oil
  • 2 Tbsp Southwest seasoning (or use fajita seasoning)
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup real bacon pieces (or use crumbled bacon)
  • 1 (8-oz) carton sour cream
  • 1 (16-oz) container guacamole
  • 1 (16-oz) carton fresh salsa

Instructions

  1. Preheat oven to 400°F; line a rimmed baking sheet with parchment paper.
  2. Rub chicken with oil; sprinkle with seasoning. Arrange seasoned chicken in a single layer on prepared pan. Bake 20 minutes or until chicken is done.
  3. Arrange chicken in center of pan to resemble nachos; sprinkle with cheeses and bacon.
  4. Bake 5 minutes or until cheese is melted. Serve with sour cream, guacamole, and salsa.

Side Dish Ingredients

  • 2 (15-oz) cans refried beans
  • 1 cup shredded Mexican-blend cheese
  • 1 (10-oz) pkg yellow rice

Side Dish Instructions

  1. Preheat oven to 400°F. Spoon beans into a greased small baking dish. Sprinkle with cheese.
  2. Bake 10 to 15 minutes or until bubbly.
  3. Cook rice according to package directions; season with salt and pepper to taste.
