Garlic Chicken with Orzo Noodles
Green SaladIngredients
- 1 cup uncooked orzo pasta
- 2 Tbsp olive oil
- 2 cloves garlic
- ¼ tsp crushed red pepper
- 2 boneless, skinless chicken breast halves, cut into bite-size pieces
- Salt to taste
- 1 Tbsp chopped fresh parsley
- 2 cups fresh spinach leaves
- Grated Parmesan cheese for topping
Instructions
- Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
- Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

- ½ cup chopped onion
- ½ cup chopped green bell pepper
- 2 (10-oz) pkg mixed salad greens
- 1 tomato, chopped
- ¼ tsp onion powder
- 3 dashes garlic powder
- 1 pinch ground black pepper
- 2 pinches salt
- 3 Tbsp balsamic vinaigrette salad dressing
Side Dish Instructions
- Microwave or sauté onion and bell pepper until soft; set aside to cool.
- In a large salad bowl, combine the onion, pepper, salad greens, and tomato. Sprinkle with the onion powder, garlic powder, black pepper and salt. Toss to mix.
- Pour on enough salad dressing or vinegar to coat, toss again and serve.
