Garlic Chicken with Orzo Noodles

Ingredients

  • 1 cup uncooked orzo pasta
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • ¼ tsp crushed red pepper
  • 2 boneless, skinless chicken breast halves, cut into bite-size pieces
  • Salt to taste
  • 1 Tbsp chopped fresh parsley
  • 2 cups fresh spinach leaves
  • Grated Parmesan cheese for topping

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
  2. Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • 2 (10-oz) pkg mixed salad greens
  • 1 tomato, chopped
  • ¼ tsp onion powder
  • 3 dashes garlic powder
  • 1 pinch ground black pepper
  • 2 pinches salt
  • 3 Tbsp balsamic vinaigrette salad dressing

Side Dish Instructions

  1. Microwave or sauté onion and bell pepper until soft; set aside to cool.
  2. In a large salad bowl, combine the onion, pepper, salad greens, and tomato. Sprinkle with the onion powder, garlic powder, black pepper and salt. Toss to mix.
  3. Pour on enough salad dressing or vinegar to coat, toss again and serve.
