Tuna-Tot Casserole

Ingredients

  • Nonstick cooking spray
  • 2 Tbsp extra-virgin olive oil
  • 8 oz sliced fresh cremini mushrooms (3 cups)
  • 12 oz fresh green beans, trimmed and cut into 1-inch pieces
  • ¾ cup finely chopped onion
  • 3 cloves garlic, minced
  • 2 cups half-and-half
  • 2 Tbsp Worcestershire sauce
  • 1½ tsp dried thyme, crushed (optional)
  • 2 (12-oz) cans solid albacore tuna in water, well-drained
  • 1 cup white Cheddar cheese, shredded (4 oz)
  • 1 (32-oz) pkg frozen fried potato nuggets
  • 3 green onions, sliced (6 Tbsp)

Instructions

  1. Preheat oven to 450°F. Coat a 3-quart rectangular baking dish with cooking spray. In a very large high-sided skillet, heat oil over medium.
  2. Add mushrooms, green beans, and onion. Cook, stirring occasionally, 7 to 8 minutes or until beans are nearly tender and liquid has evaporated. Add garlic; cook 1 minute more.
  3. Increase heat to medium-high. Add half-and-half. Boil gently, uncovered, 5 minutes or until liquid has reduced enough to coat vegetables. Stir in Worcestershire and, if desired, thyme.
  4. Spoon mixture into prepared baking dish. Top with tuna, cheese, and potatoes.
  5. Bake, uncovered, 30 to 35 minutes or until potatoes are browned and center is bubbly. Let stand 10 minutes before serving. Sprinkle with green onions.

Side Dish Ingredients

  • 2 Tbsp red wine vinegar
  • 1 Tbsp Dijon-style mustard
  • 1 tsp sugar
  • ¼ cup olive oil
  • 1 head Romaine or 2 heads Bibb lettuce, torn into bite-size pieces
  • 2 oz Manchego cheese or Parmesan cheese, shaved
  • ½ cup candied sliced almonds

Side Dish Instructions

  1. In a bowl combine red wine vinegar, Dijon mustard, and sugar. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with cheese and the almonds. Toss the salad with half of the dressing. Pass remaining dressing.
