Tuna-Tot Casserole
Quick Green SaladIngredients
- Nonstick cooking spray
- 2 Tbsp extra-virgin olive oil
- 8 oz sliced fresh cremini mushrooms (3 cups)
- 12 oz fresh green beans, trimmed and cut into 1-inch pieces
- ¾ cup finely chopped onion
- 3 cloves garlic, minced
- 2 cups half-and-half
- 2 Tbsp Worcestershire sauce
- 1½ tsp dried thyme, crushed (optional)
- 2 (12-oz) cans solid albacore tuna in water, well-drained
- 1 cup white Cheddar cheese, shredded (4 oz)
- 1 (32-oz) pkg frozen fried potato nuggets
- 3 green onions, sliced (6 Tbsp)
Instructions
- Preheat oven to 450°F. Coat a 3-quart rectangular baking dish with cooking spray. In a very large high-sided skillet, heat oil over medium.
- Add mushrooms, green beans, and onion. Cook, stirring occasionally, 7 to 8 minutes or until beans are nearly tender and liquid has evaporated. Add garlic; cook 1 minute more.
- Increase heat to medium-high. Add half-and-half. Boil gently, uncovered, 5 minutes or until liquid has reduced enough to coat vegetables. Stir in Worcestershire and, if desired, thyme.
- Spoon mixture into prepared baking dish. Top with tuna, cheese, and potatoes.
- Bake, uncovered, 30 to 35 minutes or until potatoes are browned and center is bubbly. Let stand 10 minutes before serving. Sprinkle with green onions.
Side Dish Ingredients
- 2 Tbsp red wine vinegar
- 1 Tbsp Dijon-style mustard
- 1 tsp sugar
- ¼ cup olive oil
- 1 head Romaine or 2 heads Bibb lettuce, torn into bite-size pieces
- 2 oz Manchego cheese or Parmesan cheese, shaved
- ½ cup candied sliced almonds
Side Dish Instructions
- In a bowl combine red wine vinegar, Dijon mustard, and sugar. Whisk in olive oil until combined; set aside. Place lettuce in a large serving bowl. Top with cheese and the almonds. Toss the salad with half of the dressing. Pass remaining dressing.
