One Dish Dinner
Cheesy Chicken, Broccoli, and Rice Skillet
Crunchy French Bread with Thyme ButterIngredients
- 2 (8.8-oz) pouches microwavable brown rice
- 2 (12-oz) pkg broccoli florets
- 4 Tbsp butter
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 Tbsp all-purpose flour
- 1 cup milk
- 1 cup chicken broth
- ½ tsp salt
- ½ tsp pepper
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Cook rice and and broccoli according to package directions.
- Melt butter in a large skillet over medium-high heat. Add chicken, and cook 5 minutes, stirring occasionally. Stir in flour, and cook 2 minutes. Add milk, broth, salt, and pepper; cook, stirring constantly, 5 minutes or until thickened. Remove from heat.
- Stir in 1 cup cheese until melted. Stir in rice, and broccoli. Top with 1 cup cheese. Cover, and cook 1 minute or until cheese is melted.
Side Dish Ingredients
- 1 (16-oz) loaf French bread
- ½ cup butter, softened
- 1 tsp dried thyme
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Bake bread, directly on oven rack 10 minutes or until crisp. Stir together butter, thyme, and pepper; serve with warm bread.
