Maple-Balsamic Skirt Steak
Spicy Roasted TurnipsIngredients
- ½ cup pure maple syrup
- ½ cup balsamic vinegar
- ¼ cup spicy brown mustard
- 1 Tbsp chopped fresh rosemary
- 2 lb skirt steak
- 1 tsp kosher salt
- 1 tsp pepper
Instructions
- Whisk together syrup, vinegar, mustard, and rosemary. Place steak in a large zip-top plastic freezer bag; add marinade, turning to coat. Chill 8 hours.
- Preheat grill to medium-high heat. Remove steak from marinade, discarding marinade. Sprinkle with salt and pepper.
- Grill, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before slicing.
Side Dish Ingredients
- 3 lb baby turnips, peeled and quartered
- 3 Tbsp ghee (do not melt)
- ¾ tsp salt
- ½ tsp black pepper
- ⅛ tsp cayenne pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine turnips, ghee, salt, black pepper, and cayenne pepper; spread in a single layer on 2 large rimmed baking sheets.
- Bake 20 to 25 minutes or until turnips are tender and beginning to brown, stirring halfway through baking.
