Maple-Balsamic Skirt Steak

Spicy Roasted Turnips

Ingredients

  • ½ cup pure maple syrup
  • ½ cup balsamic vinegar
  • ¼ cup spicy brown mustard
  • 1 Tbsp chopped fresh rosemary
  • 2 lb skirt steak
  • 1 tsp kosher salt
  • 1 tsp pepper

Instructions

  1. Whisk together syrup, vinegar, mustard, and rosemary. Place steak in a large zip-top plastic freezer bag; add marinade, turning to coat. Chill 8 hours.
  2. Preheat grill to medium-high heat. Remove steak from marinade, discarding marinade. Sprinkle with salt and pepper.
  3. Grill, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before slicing.

Side Dish Ingredients

  • 3 lb baby turnips, peeled and quartered
  • 3 Tbsp ghee (do not melt)
  • ¾ tsp salt
  • ½ tsp black pepper
  • ⅛ tsp cayenne pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine turnips, ghee, salt, black pepper, and cayenne pepper; spread in a single layer on 2 large rimmed baking sheets.
  2. Bake 20 to 25 minutes or until turnips are tender and beginning to brown, stirring halfway through baking.
