Onion-Smothered Pork Chops
Mashed Potatoes and Roasted BroccoliIngredients
- 2 Tbsp butter
- 2 onions, thinly sliced
- 6 (1-inch-thick) boneless pork chops
- 2 Tbsp olive oil
- 1 (10.5-oz) can French onion soup
- ½ tsp dried thyme
Instructions
- Melt butter in a large cast-iron skillet over medium heat; add onion, and cook, stirring often, 10 minutes or until very tender. Remove from skillet.
- Season pork lightly with salt and pepper. Cook in hot oil in skillet over medium-high heat 3 minutes per side or until browned. Add soup, thyme, and onions to skillet. Cook until pork is done.

- 1 (8-oz) pkg homestyle mashed potatoes
- 1 head broccoli, cut into spears
- 2 Tbsp olive oil
Side Dish Instructions
- Cook potatoes according to package directions.
- Preheat oven to 425°F. Toss together broccoli and oil on a rimmed baking sheet. Season lightly with salt and pepper. Bake 10 minutes or until browned and tender.
