Wedge Salad with Garlic-Lemon Dressing

Ingredients

  • 1½ lb ground beef
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 (15-oz) can tomato sauce
  • 1 (12-oz) pkg frozen whole kernel corn
  • ½ cup chopped dill pickles
  • ¼ cup yellow mustard
  • 1 Tbsp Montreal steak seasoning
  • 1 (8-oz) pkg four-cheese mashed potatoes
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F. Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in tomato sauce, corn, pickles, mustard, and steak seasoning. Cook, stirring often, 10 minutes. Spoon into a lightly greased 2-quart baking dish.
  3. Prepare potatoes according to package directions; dollop over meat mixture. Bake 15 minutes; sprinkle with cheese, and bake 10 minutes longer.

Side Dish Ingredients

  • 3 Tbsp fresh lemon juice
  • 3 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 head iceberg lettuce, cut into 6 wedges
  • 2 Roma tomatoes, chopped
  • 1 (5-oz) pkg seasoned croutons

Side Dish Instructions

  1. Whisk together lemon juice, oil, garlic, honey, mustard, and desired amount of salt and pepper. Divide lettuce wedges among 6 plates. Top with tomatoes, and drizzle with dressing. Sprinkle with croutons.
