Pork Chops with Bruschetta Topping

Ingredients

  • 2 (6-oz) bone-in pork chops
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1 cup grape tomatoes, quartered
  • 3 Tbsp bruschetta topping
  • 1 Tbsp thinly sliced fresh basil
  • 1 small clove garlic, minced
  • 2 tsp chopped fresh thyme
  • 2 tsp balsamic vinegar

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat until done.
  2. Meanwhile, stir together tomatoes, bruschetta topping, basil, garlic, thyme, and vinegar. Serve topping over pork.

  • ⅓ cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ½ cup low-sodium chicken broth
  • 1 (12-oz) pkg cauliflower florets
  • ¼ cup freshly shredded Parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook onion and garlic in hot oil in a large skillet over medium-high heat 5 minutes or until onion is tender, stirring occasionally.
  2. Add broth and cauliflower. Bring to a boil; reduce heat, cover, and simmer 15 minutes or until cauliflower is tender. Remove from heat.
  3. Mash cauliflower mixture with a potato masher; stir in cheese, salt, and pepper.
