Grilled Buffalo Chicken Cobb Salad

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 3 Tbsp Buffalo sauce (such as Frank's)
  • 1 (9-oz) pkg chopped romaine lettuce
  • 2 hard-cooked eggs, cut into wedges
  • ¼ cup crumbled blue cheese
  • ½ cup grape tomatoes, halved
  • ½ cup shredded carrots
  • ¼ cup refrigerated yogurt Ranch dressing (such as Bolthouse Farms)

Instructions

  1. Preheat grill to medium-high heat. Rub chicken with oil. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with Buffalo sauce.
  2. Place lettuce on a platter; arrange chicken, eggs, cheese, tomatoes, and carrots over lettuce. Drizzle with dressing.
