Grilled Buffalo Chicken Cobb Salad
Ingredients
- ½ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 3 Tbsp Buffalo sauce (such as Frank's)
- 1 (9-oz) pkg chopped romaine lettuce
- 2 hard-cooked eggs, cut into wedges
- ¼ cup crumbled blue cheese
- ½ cup grape tomatoes, halved
- ½ cup shredded carrots
- ¼ cup refrigerated yogurt Ranch dressing (such as Bolthouse Farms)
Instructions
- Preheat grill to medium-high heat. Rub chicken with oil. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with Buffalo sauce.
- Place lettuce on a platter; arrange chicken, eggs, cheese, tomatoes, and carrots over lettuce. Drizzle with dressing.
