Creamy Pumpkin Rigatoni

Ingredients

  • 6 oz rigatoni (preferably whole wheat)
  • 6 slices center cut bacon
  • 1 Tbsp minced garlic
  • 1 (15-oz) can pumpkin puree
  • 2 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 Tbsp chopped fresh sage
  • ¾ tsp salt
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook bacon in a large skillet over medium heat 5 minutes or until crisp. Drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  3. Add garlic to skillet; cook 30 seconds or until fragrant. Stir in pumpkin, broth, cream, sage, and salt; cook 2 minutes or until thoroughly heated. Add pasta; toss. Sprinkle with cheese and bacon.

Side Dish Ingredients

  • 2 Honeycrisp apples, chopped
  • 1 Tbsp fresh lemon juice
  • 1 (11.75-oz) pkg sweet kale salad kit (such as Fresh Express)

Side Dish Instructions

  1. Toss together apples and lemon juice. Combine apples and salad kit in a large bowl.
