Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (32-oz) carton chicken broth
  • 1 (10-oz) can diced tomatoes with green chiles
  • 3 (15.25-oz) cans black beans, drained
  • 2 tsp ground cumin
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook onion and garlic in hot oil in a Dutch oven over medium heat until tender; add broth, tomatoes, beans, and cumin. Cook 10 minutes or until bubbly; mash soup slightly for a thicker consistency. Top each serving with sour cream.

Side Dish Ingredients

  • 1 (12-oz) pkg nacho cheese-flavored tortilla chips
  • 1 (8-oz) pkg shredded colby-Jack cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Arrange chips on a foil-lined baking sheet; sprinkle with cheese. Bake 6 minutes or until cheese is melted.
