Crunchy Mixed Greens Salad with AvocadoIngredients
- 2 lb pork tenderloin, cut into cubes
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (32-oz) carton low-sodium chicken broth
- 1 (14.5-oz) can diced tomatoes with green peppers, celery, and onion
- 1 (8-oz) pouch chicken taco skillet sauce (such as Frontera)
- 1 (29-oz) can hominy, drained and rinsed
- ¼ cup thinly sliced radishes
Instructions
- Cook pork and garlic in hot oil in a large Dutch oven over medium-high heat 3 to 5 minutes our until browned on all sides.
- Add remaining ingredients except radishes; simmer 15 minutes. Top each serving with radishes.
Side Dish Ingredients
- 2 (5-oz) pkg sweet butter lettuce mix
- 2 avocados, sliced
- ½ cup very thinly sliced red onion
- ⅓ cup refrigerated salsa-Ranch yogurt dressing (such as Bolthouse)
- ½ cup tortilla strips
Side Dish Instructions
- Combine greens, avocado, and onion in a bowl. Drizzle with dressing; toss. Sprinkle with tortilla strips.
