Crunchy Mixed Greens Salad with Avocado

Ingredients

  • 2 lb pork tenderloin, cut into cubes
  • 4 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (14.5-oz) can diced tomatoes with green peppers, celery, and onion
  • 1 (8-oz) pouch chicken taco skillet sauce (such as Frontera)
  • 1 (29-oz) can hominy, drained and rinsed
  • ¼ cup thinly sliced radishes

Instructions

  1. Cook pork and garlic in hot oil in a large Dutch oven over medium-high heat 3 to 5 minutes our until browned on all sides.
  2. Add remaining ingredients except radishes; simmer 15 minutes. Top each serving with radishes.

Side Dish Ingredients

  • 2 (5-oz) pkg sweet butter lettuce mix 
  • 2 avocados, sliced
  • ½ cup very thinly sliced red onion
  • ⅓ cup refrigerated salsa-Ranch yogurt dressing (such as Bolthouse)
  • ½ cup tortilla strips

Side Dish Instructions

  1. Combine greens, avocado, and onion in a bowl. Drizzle with dressing; toss. Sprinkle with tortilla strips.
