Teriyaki Chicken Tenders

Ingredients
- ¼ cup soy sauce
- 2 Tbsp honey
- 1 Tbsp ginger paste (see Note)
- 2 Tbsp sesame oil
- 2 lb chicken tenderloins
- ¼ cup chopped fresh cilantro
- 1 Tbsp toasted sesame seeds
Instructions
- Preheat grill to medium-high heat. Combine soy sauce, honey, ginger paste, and 1 Tbsp oil. Toss chicken with 1 Tbsp oil; thread each chicken tenderloin onto an 8-inch metal or bamboo skewer.
- Grill chicken, covered, 3 to 4 minutes per side or until done, basting with soy sauce mixture. Sprinkle with cilantro and sesame seeds.
Side Dish Ingredients
- 1½ cups long-grain white rice
- 1 (12-oz) pkg frozen peas and carrots
- 2 cloves garlic, chopped
- 3 Tbsp sesame oil
- 3 large eggs, lightly beaten
- ¼ cup soy sauce
Side Dish Instructions
- Cook rice according to package directions; cool and chill if time permits.
- Sauté peas and carrots and garlic in hot oil in a large skillet 5 minutes or until tender; push to one side of skillet.
- Add eggs to other side; stir-fry until scrambled. Stir rice and soy sauce into eggs and vegetable mixture. Cook until thoroughly heated. Season with salt to taste.
