Loaded Buffalo Chicken Nachos
Ingredients
- 2 Tbsp butter
- 2 lb boneless, skinless chicken breasts, cubed
- ½ cup buffalo wing sauce, divided
- 1 Tbsp fresh lime juice
- 1 (11-oz) pkg tortilla chips
- 1 (15-oz) can black beans, drained and rinsed
- 1 (8-oz) pkg shredded Monterey Jack cheese
- 1 (8-oz) carton sour cream
- 2 avocados, chopped
Instructions
- Preheat oven to 400°F. Melt butter in a large skillet over medium-high heat; add chicken, and cook, stirring, until done. Stir in ¼ cup wing sauce and lime juice.
- Arrange half of chips in a single layer on a parchment-lined baking sheet.
- Top with half of chicken mixture, half of beans, and half of cheese; repeat layers. Bake 10 to 15 minutes or until cheese is melted.
- Meanwhile, stir together sour cream and ¼ cup wing sauce. Drizzle over baked nachos; top with avocado.
