Baked Spicy Shrimp Gnocchi
Lemony Mixed GreensIngredients
- 2 (16-oz) pkg gnocchi (preferably whole wheat)
- 2 Tbsp olive oil
- 1 lb peeled and deveined, large raw shrimp
- 2 pints grape tomatoes
- 2 cups roasted garlic marinara sauce (such as Rao's)
- 1 (8-oz) ball fresh mozzarella cheese, sliced
- 2 (0.5-oz) pkg fresh basil
Instructions
- Preheat oven to 450°F. Cook gnocchi according to package directions; drain and keep warm.
- Meanwhile, cook shrimp in hot oil in a large ovenproof skillet over medium-high heat 1 to 2 minutes or until shrimp turn pink. Add tomatoes; cook 2 to 3 minutes or until tomatoes begin to burst. Stir in marinara sauce and gnocchi; top with cheese, tearing if needed.
- Transfer skillet to oven, and bake 10 minutes or until cheese is melted. Sprinkle with basil leaves.

- ¼ tsp salt
- ¼ tsp pepper
- 2 (5-oz) pkg baby kale-spinach mix
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Whisk together oil, lemon juice, salt, and pepper in a bowl; add greens, and toss. Sprinkle with cheese.
