Honey-Citrus Salmon

Garlic-Roasted Brussels Sprouts

Ingredients

  • ⅓ cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp fresh lime juice
  • 1 Tbsp raw honey
  • ½ Tbsp Dijon mustard
  • ½ tsp minced fresh thyme
  • 2 (8-oz) salmon fillets
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Combine orange juice, lemon juice, lime juice, and honey in a small saucepan; bring to a boil, reduce heat, and simmer 6 minutes or until reduced by half. Stir in mustard and thyme.
  2. Preheat oven to 450°F. Place fish on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of orange mixture.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle with remaining orange sauce.

  • 1 lb Brussels sprouts, trimmed and halved
  • 1½ Tbsp avocado oil
  • 1 large clove garlic, minced
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Combine Brussels sprouts, oil, garlic, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 18 to 20 minutes or until browned, stirring once.
