Awesome Slow Cooker Pot Roast

Ingredients

  • 2 (10.75-oz) cans condensed cream of mushroom soup
  • 1 (1-oz) pkg dry onion soup mix
  • 1¼ cups water
  • 5½ lb pot roast

Instructions

  1. In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
  2. Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

Side Dish Ingredients

  • 5 lb Yukon Gold potatoes
  • ½ cup butter
  • 2 cups Parmesan cheese
  • 1 cup chopped fresh chives
  • 1½ cups cream cheese
  • ½ medium head garlic, peeled and minced
  • 1 pinch salt and pepper to taste

Side Dish Instructions

  1. Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat to dry for 1 to 2 minutes.
  2. Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper. Use a potato masher to mash until smooth and serve.
