Awesome Slow Cooker Pot Roast
The Best Mashed PotatoesIngredients
- 2 (10.75-oz) cans condensed cream of mushroom soup
- 1 (1-oz) pkg dry onion soup mix
- 1¼ cups water
- 5½ lb pot roast
Instructions
- In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
- Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.
Side Dish Ingredients
- 5 lb Yukon Gold potatoes
- ½ cup butter
- 2 cups Parmesan cheese
- 1 cup chopped fresh chives
- 1½ cups cream cheese
- ½ medium head garlic, peeled and minced
- 1 pinch salt and pepper to taste
Side Dish Instructions
- Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat to dry for 1 to 2 minutes.
- Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper. Use a potato masher to mash until smooth and serve.
