  • ½ cup plain hummus
  • 4 soft taco-size whole wheat tortillas
  • ½ lb thin deli-sliced low-sodium roast beef
  • 2 roasted red peppers, thinly sliced
  • ¼ cup thinly sliced red onion
  • 2 cups baby arugula

Instructions

  1. Spread hummus over tortillas.
  2. Top with roast beef, peppers, onion and arugula; roll up.
