Italian Sausage-Ravioli Soup
Nutty Apple-Arugula SaladIngredients
- 1 (4-oz) hot Italian turkey sausage link (casing removed)
- ½ cup chopped onion
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- ½ (24-oz) jar natural marinara sauce (such as Rao's)
- ½ (32-oz) carton low-sodium chicken broth
- ½ (18-oz) pkg refrigerated spinach and ricotta ravioli (such as Rana)
- 2 Tbsp chopped fresh basil
Instructions
- Cook sausage, onion, and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender and sausage is done.
- Add marinara and broth; bring to a boil, reduce heat, and simmer 10 minutes.
- Stir in ravioli; cook 4 to 6 minutes or until done. Stir in basil just before serving.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula
- 1 Honeycrisp apple, thinly sliced
- 2 Tbsp glazed pecans, coarsely chopped
- 3 Tbsp refrigerated balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl just before serving.
