Slow Cooker Cajun Beef Chili

Ingredients

  • 1¼ lb beef stew meat
  • ½ tsp Cajun seasoning
  • ¼ tsp black pepper
  • 1 cup chopped onion
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes
  • 1 cup beef both

Instructions

  1. Sprinkle beef with Cajun seasoning and pepper.
  2. Combine onion, bell pepper, and garlic in a 3- or 4-quart slow cooker. Place beef over vegetables. Pour tomatoes and broth over beef.
  3. Cover and cook on LOW 4 hours or until beef is tender.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1½ tsp fresh lime juice
  • 2 Tbsp chopped fresh flat-leaf parsley
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • 4 cups tricolor coleslaw

Side Dish Instructions

  1. Whisk together first 5 ingredients in a bowl. Add slaw; toss.
