Slow Cooker Cajun Beef Chili
Parsley-Lime SlawIngredients
- 1¼ lb beef stew meat
- ½ tsp Cajun seasoning
- ¼ tsp black pepper
- 1 cup chopped onion
- ½ cup chopped green bell pepper
- 2 cloves garlic, minced
- 1 (14.5-oz) can diced tomatoes
- 1 cup beef both
Instructions
- Sprinkle beef with Cajun seasoning and pepper.
- Combine onion, bell pepper, and garlic in a 3- or 4-quart slow cooker. Place beef over vegetables. Pour tomatoes and broth over beef.
- Cover and cook on LOW 4 hours or until beef is tender.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1½ tsp fresh lime juice
- 2 Tbsp chopped fresh flat-leaf parsley
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 4 cups tricolor coleslaw
Side Dish Instructions
- Whisk together first 5 ingredients in a bowl. Add slaw; toss.
