Hearty Beef and Vegetable Soup
Ingredients
- ½ lb lean ground beef
- 1½ Tbsp vegetable oil, divided
- 1 cup chopped green bell pepper
- ½ cup chopped red onion
- 1 cup chopped green cabbage
- 1 cup frozen mixed vegetables
- ½ (14.5-oz) can stewed tomatoes
- 2 cups beef broth
- 1½ tsp Worcestershire sauce
- 1 small bay leaf
- ⅛ tsp pepper
- 2 Tbsp ketchup
Instructions
- Cook beef in ½ Tbsp hot oil in a Dutch oven coated with cooking spray over medium-high heat 2 minutes.
- Stir in bell pepper and onion; cook 4 minutes or until onion is tender.
- Stir in cabbage, mixed vegetables, tomatoes, broth, Worcestershire sauce, bay leaf, and pepper; bring to a boil.
- Reduce heat to medium; cover, and cook 15 minutes.
- Stir in ketchup and 1 Tbsp oil, and remove from heat. Let stand, covered, 10 minutes.
