Steakhouse Salad

Ingredients

  • 1½ lb flank steak
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup crumbled blue cheese, divided
  • ¾ cup mayonnaise
  • 3 Tbsp half-and-half 
  • 2 tsp white vinegar
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (10-oz) pkg spinach
  • 1 pint grape tomatoes, halved
  • ½ small red onion, thinly sliced

Instructions

  1. Preheat oven to 400°F. Sprinkle steak with salt and pepper. Cook steak in hot oil in a large ovenproof skillet over medium-high heat 2 minutes per side or until browned.
  2. Transfer skillet to oven, and bake 10 minutes or to desired doneness. Let stand 10 minutes before slicing.
  3. Meanwhile, whisk together 6 Tbsp cheese, mayonnaise, half-and-half, and vinegar.
  4. Divide lettuce and spinach among 6 plates; top with tomatoes, onion, and steak. Drizzle with dressing, and sprinkle with remaining cheese.
