Coconut Pork Curry
Broccoli Cauli-RiceIngredients
- 6 (5-oz) boneless pork chops
- 3 Tbsp olive oil
- 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
- 1¼ cups unsweetened coconut milk
- 2 Tbsp mild curry paste
- 3 Tbsp chopped fresh cilantro
- 1 tsp fresh lime juice
Instructions
- Cook pork, in batches if needed, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
- Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
- Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.
- Sprinkle with cilantro and lime juice.

- 1 onion, chopped
- 2 clove garlic, minced
- 1 (12-oz) pkg frozen riced cauliflower and broccoli
- ¼ cup low-sodium chicken broth
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add garlic; cook 2 minutes.
- Stir in riced cauliflower and broccoli, broth, salt, and pepper; cover and cook 15 minutes.
