Coconut Pork Curry

Ingredients

  • 6 (5-oz) boneless pork chops
  • 3 Tbsp olive oil
  • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
  • 1¼ cups unsweetened coconut milk
  • 2 Tbsp mild curry paste
  • 3 Tbsp chopped fresh cilantro
  • 1 tsp fresh lime juice

Instructions

  1. Cook pork, in batches if needed, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned. Remove from skillet.
  2. Add tomatoes, coconut milk, and curry paste to skillet; bring to a boil, reduce heat, and simmer.
  3. Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.
  4. Sprinkle with cilantro and lime juice.

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 clove garlic, minced
  • 1 (12-oz) pkg frozen riced cauliflower and broccoli
  • ¼ cup low-sodium chicken broth
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add garlic; cook 2 minutes.
  2. Stir in riced cauliflower and broccoli, broth, salt, and pepper; cover and cook 15 minutes.
