One-Pot Taco Chili Mac

Ingredients

  • 1½ lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1 (14.5-oz) can diced tomatoes with green chiles
  • 1 (8-oz) can tomato sauce
  • 1 (14.5-oz) can gluten-free beef broth
  • 1 cup water
  • ½ tsp salt
  • ½ (16-oz) pkg gluten-free elbow macaroni
  • 1 (8-oz) block sharp Cheddar cheese, shredded
  • ½ cup chopped fresh cilantro
  • 2 green onions, chopped

Instructions

  1. Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in chili powder, tomatoes, tomato sauce, broth, water, and salt. Bring to a boil; add macaroni. Cook 10 minutes, stirring occasionally, or until macaroni is tender. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onions.
