Fire-Roasted Tomato Soup

Ingredients

  • 2 (28-oz) cans crushed tomatoes
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 cup heavy cream
  • 1½ tsp smoked paprika (or use regular)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ⅛ tsp sugar
  • 1 (5-oz) pkg seasoned croutons

Instructions

  1. Process all ingredients except croutons in a blender until smooth or use an immersion blender in a large saucepan.
  2. Pour puree into a large saucepan, and cook over medium heat 15 minutes or until thoroughly heated. Top with croutons.
