Honey-Ginger Shrimp Skewers

Ingredients

  • 2 Tbsp honey
  • 1 Tbsp sesame oil
  • 2 tsp low-sodium soy sauce
  • ½ Tbsp minced garlic
  • ½ Tbsp ginger paste
  • ⅛ tsp crushed red pepper
  • ¼ tsp kosher salt
  • 1 lb peeled and deveined, large raw shrimp

Instructions

  1. Preheat broiler. Whisk together honey, oil, soy sauce, garlic, ginger paste, red pepper, and salt; divide mixture between two bowls. Add shrimp to one bowl; toss and let stand 10 minutes. Set second bowl aside; reserve as a dipping sauce.
  2. Thread shrimp onto 3 metal skewers. Place on a foil-lined baking sheet; broil 2 to 3 minutes per side or until shrimp turn pink.
  3. Serve shrimp with reserved dipping sauce.

Side Dish Ingredients

  • ½ (16-oz) pkg tricolor coleslaw
  • 1 (6.5-oz) container grapefruit segments (such as Del Monte)
  • 1 cup diced pineapple
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp roasted, salted cashews
  • ¼ cup ginger-honey dressing (such as Litehouse)
  • 1 avocado, sliced

Side Dish Instructions

  1. Toss together all ingredients except avocado in a large bowl. Top with avocado.
