Honey-Ginger Shrimp Skewers
Grapefruit-Pineapple SlawIngredients
- 2 Tbsp honey
- 1 Tbsp sesame oil
- 2 tsp low-sodium soy sauce
- ½ Tbsp minced garlic
- ½ Tbsp ginger paste
- ⅛ tsp crushed red pepper
- ¼ tsp kosher salt
- 1 lb peeled and deveined, large raw shrimp
Instructions
- Preheat broiler. Whisk together honey, oil, soy sauce, garlic, ginger paste, red pepper, and salt; divide mixture between two bowls. Add shrimp to one bowl; toss and let stand 10 minutes. Set second bowl aside; reserve as a dipping sauce.
- Thread shrimp onto 3 metal skewers. Place on a foil-lined baking sheet; broil 2 to 3 minutes per side or until shrimp turn pink.
- Serve shrimp with reserved dipping sauce.
Side Dish Ingredients
- ½ (16-oz) pkg tricolor coleslaw
- 1 (6.5-oz) container grapefruit segments (such as Del Monte)
- 1 cup diced pineapple
- ¼ cup chopped fresh cilantro
- 2 Tbsp roasted, salted cashews
- ¼ cup ginger-honey dressing (such as Litehouse)
- 1 avocado, sliced
Side Dish Instructions
- Toss together all ingredients except avocado in a large bowl. Top with avocado.
