Open-Faced Tuna Melts

Ingredients

  • 4 (5-oz) cans solid albacore tuna in water, drained and flaked
  • ⅓ cup mayonnaise
  • ¼ cup very finely chopped red onion
  • 2 Tbsp sweet pickle relish
  • 1 Tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices hearty whole-grain bread
  • 1 Tbsp butter, softened
  • 6 large slices colby-Jack cheese

Instructions

  1. Preheat broiler. Stir together tuna, mayonnaise, onion, relish, lemon juice, salt, and pepper in a bowl.
  2. Arrange bread on a large baking sheet; spread one side with butter. Broil 1 minute or until lightly toasted.
  3. Spoon tuna mixture onto bread; top with cheese. Broil 2 minutes or just until cheese is melted.
