Open-Faced Tuna Melts
Ingredients
- 4 (5-oz) cans solid albacore tuna in water, drained and flaked
- ⅓ cup mayonnaise
- ¼ cup very finely chopped red onion
- 2 Tbsp sweet pickle relish
- 1 Tbsp lemon juice
- ½ tsp salt
- ½ tsp pepper
- 6 slices hearty whole-grain bread
- 1 Tbsp butter, softened
- 6 large slices colby-Jack cheese
Instructions
- Preheat broiler. Stir together tuna, mayonnaise, onion, relish, lemon juice, salt, and pepper in a bowl.
- Arrange bread on a large baking sheet; spread one side with butter. Broil 1 minute or until lightly toasted.
- Spoon tuna mixture onto bread; top with cheese. Broil 2 minutes or just until cheese is melted.
